This one is dedicated to my sisters.
The month of February is the month both of my sisters were born. In fact, their birthdays are a day apart...no they are not twins. Although sometimes I think they act like twins. Anyway, my sisters and I growing up always made "Smith Island Cake" for our birthdays. A little about this cake...it had 8+ layers, Nutella frosting and it was tradition for us to make this cake. So, I gave our Smith Island Cake a new twist...and MORE chocolate.
This cake is Moist. Chocolatey. Tempting. Delicious. And it tastes BETTER than it looks. Promise!

Honey Lime Chicken Fajitas
These taste so fresh. A delight for your mouth!
I have been enjoying Pintrest a lot lately. Love looking at all the ideas, food etc. Makes my creative mind flow and create. Now, having said that...it is wise to only be on for mo longer than 15 minutes or you will be sucked in even further.
So I was thinking about my blog the other day and of course the reason I started this is for my kids. I was thinking more about how I add my own little 2 cents in about what is going on if life and my day. And came to realize, this blog is also like my journal. So, as the years pass and I forget day to day memories, I could always look back and reflect. Better yet, my kids can reflect and remember.
That is what is going on in life at the moment. Also, continuing my projects around the house. And today, I am going to make a cake and dedicate it to my sisters. Why? A few reasons. 1. Both their birthdays are in the month of February (only a day apart). 2. Nutella is going to be part of the cake (my sister's LOVE Nutella). 3. I want to make a cake. Will post this week....so stay tuned.

Cinnamon Roll Cake: Healthy
Oh this is Good. Really Good. And the best part? Good for you!
So, I am sure some of you have seen this recipe. It is posted all over Pintrest. And I have seen it on a few different blogs. It is all the same. And I am sure it is good.
I changed mine. For me, food needs to #1. Taste FANTASTIC. And #2. Be good for me: Healthy. I don't like eating too much sugar and crap that is not good for my insides=not good for any side of me :)
My sis-in law gave me a challenge. She made this cake for her family and her husband LOVED it! She told him "I know why you like it, it is full of butter and sugar and white flour." Agree. That would be good. But she gave me the recipe and asked what I would do if I made it and here is what I came up with....
But before I get to the recipe, I have to say that this cake does not taste like a "Health Cake" in fact, it tastes the same, just not made the same. But for the info, here is what changed: 1. Less sugar. 2. Whole grains: Wheat flour & Oats. 3. Less butter=Less fat. But I didn't change the cinnamon...that spice is Good!

Cinnamon Crunch Sweet Potato Muffins
If your a fan of Sweet Potatoes...or Not, you will Love these!
I am a fan. Yes. Sweet Potatoes I L-O-V-E! My kids on the other hand, say "Ick, sweet potatoes" or "Mom, what is in this...are there sweet potatoes in it?" Well guess what kids?! Yes, there are sweet potatoes in these, but I didn't tell them that. And yes, the loved these muffins too. Success!
Frustration. Projects. The 2 things that have consumed my life lately. 1st: Frustration. My computer is not working well. Slow etc. etc. Problems. Needs to be wiped I fear and start fresh. Hassle. Also, Photoshop is having issues. Grrrrumble! My fonts get stuck and I can't write what I want and then it exits out when I am trying to work on something. So, needless to say I haven't digi scrap lately for fear of losing what I am working on. But Photoshop is the reason my font in my pictures is different than normal. Don't get me wrong, I like the font...but Frustration. And all this adds up to not being able to blog as much as I would like. Hopefully I can get these problems fixed quickly!
2nd: Projects. I am doing major re-decorating in my house. For example, I painted ALL my kitchen cabinets black. Looks Amazing! Sharp. Classy. I will post pictures once we finish putting up the molding. Also, painting all sorts of walls in my house. Sewing curtains, pillows, table cloths etc. etc. Busy.
